Weekly Menu: March 26 – April 1, 2018

My life still isn’t quite back to a normal schedule, but it’s coming together slowly but surely. As I’m typing this I am thoroughly enjoying this amazing Pollock Escabeche with asparagus and some jasmine rice. It’s almost 7:30, which is way past my normal dinner time, but I’ve been running non stop all day. This recipe was quick and delicious and would be perfect for a weeknight meal.
