Weekly Menu: February 11 – 17, 2018

So remember those chickpea blondies I said I was going to make? DANGEROUS. They are SO GOOD. I’ll be talking about them a bit more later in the week but I wanted to give you the heads up on how tasty they were. So this week is a special week! It’s the week I get to crack open my HOMEMADE SAUERKRAUT! It’s been sitting in my closet since New Years Eve and it’s finally ready to heartily consume. I hope it’s amazingly delicious.

Also I didn’t get around to the Huevos Rancheros last week. I had a bit of a scheduling problem for a project I’m working on and it threw a wrench in my day but I am definitely going to be making them this week for sure. Also… COCONUT CREAM PIE OVERNIGHT OATS! Mmmm.

The rest of the week is pretty basic, but check it out, I’m eating tofu… AGAIN. That’s the third time this year alone! How cool is that? I got 2 blocks of extra firm for 99c and I’ve been craving Chinese food something fierce lately.

Weekly Menu: February 4 – 10, 2018

OH MY GOSH YOU GUYS!!! The Philadelphia Eagles won the Super Bowl! It was amazing!

I’ve never been a huge football fan but I’ve lived just outside of Philadelphia for my entire life, so I had to watch them in the Super Bowl. I even made whoopie pies in the shape of footballs!

So this week’s menu is pretty basic and easy, but I’m excited about it nonetheless. Especially about the chickpea blondies! I hear they’re fantastic.

Weekly Menu: January 28 – February 3, 2018

My sleep has been pretty garbage lately. This past week I fell asleep before 9 half the days and have been waking up before 5 most days. It sucks. One day I was out of the house at 6:30 am and didn’t get home until after 9 pm. Long, dark, cold days and bad sleep lead to very poor eating choices and not enough time at the gym. But I prevail!

I think I’m most excited about the Baby Back Rib Salad. I’m planning to make the ribs in the crockpot before broiling them a bit to char them and serving them over a tossed salad with cornbread and ranch dressing. Yum! I’m also making labneh again, since my good friend Paul made it and waxed poetic about it and now I want some.
