Weekly Menu: April 16 – 22, 2018

This weekend has flown by! (Yes it’s still my weekend.) Saturday morning I took my very first spin class! And Saturday night I had my girls over for a game night and we made homemade nachos. I had a lot of leftovers, so I decided to turn those into taco salads for lunch this week! I’ve been craving meatball subs so I’m going to make a meatball flavored meatloaf and serve it as an open faced sandwich with tomato sauce and mozzarella.

Dal Makhani is black lentil curry and I’m serving that with naan. I’ve got the Peanut Butter & Jelly Steel Cut Oats in the crockpot right now for breakfast tomorrow and boy am I excited!

Weekly Menu: April 9 – 15, 2018

I’m still adjusting to cooking for one, so I’ve got plenty of leftover black bean soup for lunches this week. I’m also cleaning out my fridge to make the garden vegetable pasta salad, since I have leftover zucchini and bell peppers, and I always have pasta on hand!

Weekly Menu: April 2 – 8, 2018

I hope you all had a lovely Easter weekend! I spent mine with my walking group girlfriends. We had Easter Brunch at a local diner after a nice walk. Then Monday I attended a vow renewal for a couple that have been married for 38 years. It was a lovely event with entirely too much food, but a joyous occasion. This Saturday I’m attending yet another Easter event: the annual family Easter egg hunt! To say I’m ready for life to settle back into a routine would be an understatement.
