Happy Labor Day Weekend, peeps! 😀 This week’s menu is all over the place.
Bitchin’ bowls are apparently the Paleo version of the vegan Buddha bowl! I’m making mine with Pastelon flavored beef (raisins, green olives and sofrito), plantain chips, cauli rice and baby kale! The Pork Bone Vegetable Soup with have a hint of Vietnamese spice in it, and of course Methi Dal is authentic Indian food (as long as the local Indian market has the fenugreek I need). And yes, I know an antipasto pasta salad is sort of wrong, but I’m making pasta salad with roasted peppers, olives, mozzarella and artichokes! Yum! Easy breakfasts this week, as I’m feeling a little lazy. Hope you have a great week!
