I’m late to the zoodle train. Mostly because I think zoodles is a dumb name, but a heckuva lot easier to say then zucchini noodles. But I got myself a cheap spiralizer and gave it a try a few times. Each time I cooked the zoodles before eating them, and they were good, but missing that spaghetti mouth feel.

But it took a visit to a local vegan restaurant to realize the true potential of zucchini noodles. At Heartbeet Kitchen in Westmont, NJ, I had the eggplant meatballs over zucchini noodles… but they were raw. They were raw and amazing!
Now I love me some delicious pasta, especially with meat sauce, but it’s so hard to feel fully satisfied with a tiny portion of pasta, but I could eat a giant BOWLFUL of zoodles and it’s just zucchini so it’s low low low calorie. Last month I had cooked zoodle scampi with Crab Cakes and it was super good but last night’s dinner was THE BEST.
I took a can of garlic & herb pasta sauce and added it to some ground beef that I’d browned and drained and served it over raw zoodles. Add some parmesan cheese and BAM! Delicious, healthy and EASY dinner. You see folks? Not all of my dinners need to be elaborate or complicated, some times they’re just a tweak to good old comfort food.
I added a big tossed salad and had a huge and satisfying dinner for around 400 calories!

Holy crap! DON’T cook the zoodles, BAM! Never thought they would be better cuz I’m not in love with cooked zoodles so I will try it this way! Thanks honey!
