I spent Saturday through Tuesday having an incredibly amazing trip down in Ocean City, NJ with my girlfriends: a true Girl’s Weekend. What happens in Ocean City stays in Ocean City, amirite, ladies? 😉 So I haven’t gone grocery shopping in more than a week and I’m scrounging through cabinets to put dinners together this week. Plus it’s HOT, so I don’t want to slave over the stove in the evenings. Can you blame me? So I’m winging it! But I had all the ingredients (*cough* ALMOST all) for a delicious and refreshing tuna salad that involved NO COOKING AT ALL! ❤
Ever since a trip to Baltimore as a little girl I’ve loved apples in my tuna salad. My dad and I first had apples in tuna salad at a restaurant (whose name is lost to time) on the waterfront and we’ve made it with apples ever since. Another must for me in tuna salad is relish. Sweet relish. Which I didn’t have. But I did have GHERKINS!!
I chopped up the leftover gherkins, a half cup of onion, a half cup of celery and a large apple. Then I drained the tuna SUPER WELL and added that and 1/4 cup mayo to the bowl and stirred it well.
I served mine on a single slice of Sesame Ezekiel Bread, toasted and alongside a small salad with French dressing.
So yummy and fresh for a hot summer’s day!
Apple Gherkin Tuna Salad

A chunky, slightly sweet burst of flavor.
NUTRITION PER SERVING: 206 cals, 10.7g fat, 11.9g carbs, 16.6g protein.
Ingredients
- 3 4-oz. cans chunk light tuna, drained well
- 1/2 cup gherkins, chopped
- 1 cup apple, chopped
- 1/2 cup onions, chopped fine
- 1/2 cup celery, chopped
- 1/4 cup mayo
Directions
- 1. In a bowl, combine all of the ingredients well.
- Serve over salad or a slice of whole grain bread.
