Mandarin Yogurt Creamsicle Pops

IMG_20150806_075114567Who doesn’t love a good creamsicle?! Growing up, they were always in the house, along with creamsicle ice cream, because my dad LOVED the creamy vanilla ice cream with orange sherbet. Feeling nostalgic, and making a promise in my August 1st blog, I decided I would healthify the creamsicle idea, and make them with yogurt! This recipe is super simple, takes mere minutes, and are only FIFTY EIGHT CALORIES apiece. No kidding. Check it out:

IMG_20150802_071057747Take one cup of 2% plain Greek yogurt and 1 can of mandarin oranges in light syrup (plus a teaspoon of vanilla extract, not shown)…

IMG_20150802_071307489_HDR (1)…and put them in the blender if you have one. I don’t, so I put it in a  4 cup glass measuring cup and used my stick blender, which made  it look like THIS:

IMG_20150802_071425847 (1)Then pour the mixture into your popsicle molds. My molds took about 3/8 of a cup each, so this recipe made 8 popsicles for me, at 58 calories apiece. The flavor is less sweet than your standard creamsicle and a bit tangier, but definitely yummy, and HEALTHY! Who can complain about that?

Toss them in the freezer for a few hours and voila! Creamsicles! (I needed to dip the mold in warm water to release the popsicles easily.)

  1. Wow! Easy, healthy, and pretty to look at, too!! I think my favorite flavor of popsicle is chocolate fudge.
    And while I enjoy a good creamsicle, I do love the combination of chocolate ice cream and orange sherbet!
